Vinification and Aging: Grapes are hand-harvested and pressed using pneumatic pressure within a few hours. The wine is then aged for two years in stainless steel tanks, allowing it to naturally clarify almost entirely on its own. After bottling, it is left to rest for at least six months to settle.
